Hearty, smoky, and deeply comforting — slow cooker sausage and beans simmered low and slow in a rich savory broth with tender beans, smoky sausage, garlic, and bold seasonings. This cozy one-pot meal delivers thick, flavorful spoonfuls packed with protein and rustic comfort perfect for chilly nights, busy weekdays, or casual family dinners.
INGREDIENTS
• 1 pound smoked sausage, sliced into rounds
• 3 cans white beans or pinto beans, drained and rinsed
• 1 medium onion, diced
• 3 cloves garlic, minced
• 1 can diced tomatoes (14.5 ounces)
• 2 cups chicken broth
• 2 tablespoons tomato paste
• 1 teaspoon smoked paprika
• 0.5 teaspoon black pepper
• 0.5 teaspoon salt
• 0.5 teaspoon dried thyme
• 0.25 teaspoon crushed red pepper flakes (optional)
• 2 tablespoons brown sugar
• Fresh parsley for garnish
STEPS
- Prepare the slow cooker: Lightly grease the inside of the slow cooker or spray with nonstick cooking spray to help prevent sticking during the long cooking time.
- Brown the sausage: Heat a skillet over medium heat and cook the sliced smoked sausage for 4–5 minutes until lightly browned around the edges. Browning adds deeper smoky flavor and richer texture to the final dish.
- Add ingredients to the slow cooker: Transfer the browned sausage to the slow cooker along with the beans, diced onion, minced garlic, diced tomatoes, chicken broth, and tomato paste.
- Season the mixture: Add the smoked paprika, black pepper, salt, thyme, crushed red pepper flakes if using, and brown sugar. Stir thoroughly until everything is evenly combined and the tomato paste dissolves into the broth.
- Slow cook: Cover with the lid and cook on LOW for 6–7 hours or HIGH for 3–4 hours until the onions are tender and the flavors have blended into a rich smoky sauce.
- Thicken the beans: During the final 30 minutes slightly mash a small portion of the beans with the back of a spoon to naturally thicken the broth while still keeping plenty of whole beans for texture.
- Taste and adjust: Stir well and taste before serving adjusting salt, pepper, or spice level if needed depending on the smokiness of the sausage used.
- Serve warm: Ladle into bowls and garnish with fresh parsley. Serve hot with cornbread, crusty bread, or rice for a hearty comforting meal.
NOTES
Tips: Smoked sausage such as kielbasa, andouille, or smoked beef sausage gives this dish its rich savory flavor and hearty texture. Browning the sausage before adding it to the slow cooker creates extra depth and helps develop caramelized flavor. White beans create a creamy texture while pinto beans add a rustic Southern-style feel — either works beautifully. Tomato paste thickens the broth and adds richness while brown sugar balances the smoky and savory notes perfectly. For extra flavor add diced bell peppers, celery, or a splash of hot sauce near the end of cooking. This dish becomes even more flavorful after resting making it ideal for meal prep and leftovers. Store tightly covered in the refrigerator for up to 4 days or freeze for up to 2 months. Reheat gently on the stovetop or in the microwave adding a splash of broth if needed to loosen the sauce.
