Pineapple Bake

Sweet, buttery, and delightfully tropical — this Pineapple Bake is the ultimate comfort dessert (or side dish!) that brings a taste of sunshine to your table. It’s simple, nostalgic, and pairs beautifully with ham, pork, or even enjoyed on its own warm from the oven.

Ingredients

  • 1 cup sugar
  • ½ cup butter, softened
  • 4 large eggs
  • 1 (20 oz) can crushed pineapple, undrained
  • 5 slices white bread, torn into small pieces
  • 1 teaspoon vanilla extract
  • Pinch of salt

Instructions

  1. Preheat your oven: Set to 350°F (175°C). Grease a medium baking dish (about 8×8 inches).
  2. Cream butter and sugar: In a large mixing bowl, beat together the softened butter and sugar until light and fluffy.
  3. Add eggs and vanilla: Beat in the eggs one at a time, then stir in the vanilla extract.
  4. Incorporate pineapple: Mix in the crushed pineapple with its juice until fully combined.
  5. Add bread pieces: Gently fold in the torn bread until everything is evenly coated with the pineapple mixture.
  6. Transfer and bake: Pour the mixture into your prepared baking dish and smooth the top.
  7. Bake: Cook uncovered for 45–50 minutes, or until golden brown and set in the center.
  8. Cool slightly: Let it rest for 10–15 minutes before serving — it will thicken as it cools.

Pro Tips

  • Use day-old bread for a firmer, more pudding-like texture.
  • Want extra flavor? Sprinkle a pinch of cinnamon or nutmeg on top before baking.
  • Serve warm with a scoop of vanilla ice cream or a dollop of whipped cream for dessert.
  • For a savory twist, reduce the sugar slightly and serve alongside baked ham or roasted pork.
