1. Prepare the pan
Preheat the oven to 425°F or 220°C.
Lightly grease an 8-inch springform pan. Line the bottom and sides with two large sheets of parchment paper, allowing the paper to rise at least 2 inches above the edge of the pan.
The parchment paper does not need to look perfectly smooth. The folds create the rustic appearance associated with Basque cheesecake.
Place the prepared pan on a baking sheet in case a small amount of batter leaks during baking.
2. Beat the cream cheese and sugar
Place the softened cream cheese and granulated sugar in a large mixing bowl.
