Georgia Knockout Dip

Bold, creamy, and absolutely addictive — this Georgia Knockout Dip is a rich Southern-style party dip loaded with savory meats, creamy cheese, tangy pickles, and a punch of seasoning. Perfect for game days, gatherings, or anytime you need a crowd-pleasing appetizer that disappears fast, this dip delivers big flavor in every scoop.

INGREDIENTS
• 8 ounces cream cheese, softened
• 0.5 cup mayonnaise
• 1 cup shredded sharp cheddar cheese
• 0.5 cup cooked bacon, crumbled
• 0.5 cup diced ham or smoked sausage, finely chopped
• 0.25 cup green onions, finely sliced
• 0.25 cup dill pickles, finely diced
• 1 tablespoon pickle juice
• 1 teaspoon garlic powder
• 0.5 teaspoon onion powder
• 0.5 teaspoon black pepper
• 0.25 teaspoon smoked paprika
• Crackers, chips, or toasted bread for serving

STEPS

  1. Soften the base: Allow the cream cheese to soften at room temperature for about 20–30 minutes so it mixes easily into a smooth, creamy base without lumps.
  2. Mix the creamy layer: In a large bowl combine the cream cheese and mayonnaise. Beat until smooth, fluffy, and fully blended.
  3. Add seasoning: Stir in garlic powder, onion powder, black pepper, smoked paprika, and pickle juice. Mix well so the flavors are evenly distributed throughout the base.
  4. Add the mix-ins: Fold in the shredded cheddar cheese, crumbled bacon, diced ham or smoked sausage, green onions, and finely diced pickles.
  5. Combine thoroughly: Stir until everything is evenly coated and the dip becomes thick, chunky, and well mixed.
  6. Chill the dip: Cover and refrigerate for at least 1 hour so the flavors meld together and the texture firms up.
  7. Stir before serving: Give the dip a good stir before serving to redistribute all the ingredients evenly.
  8. Serve and enjoy: Serve cold with crackers, tortilla chips, toasted baguette slices, or fresh vegetables for dipping.

NOTES
Tips: This dip gets its “knockout” flavor from the combination of smoky meat, sharp cheese, and tangy pickles. Using both cream cheese and mayonnaise creates a rich, scoopable texture that holds all the mix-ins together. Smoked paprika enhances the savory depth, while pickle juice adds a subtle tang that balances the richness. For extra heat, add a dash of hot sauce or diced jalapeños. This dip can be customized with turkey, chicken, or even leftover roast beef for different flavor variations. It’s best made ahead of time so the flavors can fully develop in the refrigerator. Store tightly covered for up to 3–4 days and stir before serving. It pairs perfectly with crunchy chips, buttery crackers, or fresh veggie sticks and is guaranteed to be one of the first dishes to disappear at any gathering.
