Cucumber Sandwich

Light, refreshing, and delightfully creamy — these classic cucumber sandwiches feature crisp cucumber slices layered between soft bread and a flavorful herb cream cheese spread. INGREDIENTS
• 1 large English cucumber, thinly sliced
• 8 ounces cream cheese, softened
• 2 tablespoons mayonnaise
• 1 tablespoon fresh dill, finely chopped
• 1 teaspoon lemon juice
• 0.5 teaspoon garlic powder
• 0.5 teaspoon salt
• 0.25 teaspoon black pepper
• 8 slices soft white bread or whole wheat bread
• 1 tablespoon fresh chives, finely chopped (optional)

STEPS

Prepare the cucumber: Wash and dry the cucumber thoroughly. Slice it into very thin rounds using a sharp knife or mandoline for the best texture.

Remove excess moisture: Place the cucumber slices on paper towels and lightly sprinkle with a pinch of salt. Let them sit for 10 minutes, then pat dry to remove excess water.

Make the spread: In a medium bowl, combine the softened cream cheese, mayonnaise, fresh dill, lemon juice, garlic powder, salt, and black pepper. Mix until smooth and creamy.

Prepare the bread: Lay the bread slices on a clean surface. Trim off the crusts if desired for a traditional tea sandwich presentation.

Spread the filling: Evenly spread the cream cheese mixture over one side of each slice of bread, making sure to cover the edges.

Add the cucumber: Arrange a single layer of cucumber slices over four slices of bread. Slightly overlap the slices for even coverage.

Assemble the sandwiches: Top with the remaining bread slices, cream cheese side facing down, and gently press together.

Slice and serve: Cut each sandwich into halves, triangles, or finger-sized rectangles. Sprinkle with fresh chives if desired.

Chill briefly: Refrigerate for 10–15 minutes before serving for the freshest flavor and neatest slices.
