Cookies Made From Brownie Mix

Fudgy, rich, and loaded with deep chocolate flavor — soft brownie mix cookies with crackly tops, chewy centers, and gooey chocolate in every bite. These quick and easy cookies come together with just a few ingredients and bake into decadent bakery-style treats perfect for chocolate lovers and last-minute dessert cravings.

INGREDIENTS
• 1 box brownie mix (18–19 ounces)
• 2 large eggs
• 0.25 cup vegetable oil
• 2 tablespoons all-purpose flour
• 1 teaspoon vanilla extract
• 1 cup semi-sweet chocolate chips
• 0.5 cup chopped walnuts or pecans (optional)
• Flaky sea salt for topping (optional)

STEPS

  1. Preheat the oven: Preheat your oven to 350°F (175°C). Line two baking sheets with parchment paper to prevent sticking and help the cookies bake evenly.
  2. Mix the wet ingredients: In a large bowl whisk together the eggs, vegetable oil, and vanilla extract until smooth and fully combined.
  3. Add the brownie mix: Pour the brownie mix and flour into the bowl and stir with a rubber spatula or wooden spoon until a thick glossy dough forms. The dough will be much thicker than brownie batter but softer than traditional cookie dough.
  4. Fold in the chocolate: Add the chocolate chips and chopped nuts if using. Fold gently until evenly distributed throughout the dough.
  5. Scoop the cookies: Use a cookie scoop or tablespoon to portion the dough onto the prepared baking sheets spacing the cookies about 2 inches apart since they will spread slightly while baking.
  6. Add finishing touches: Sprinkle the tops lightly with flaky sea salt if desired to enhance the rich chocolate flavor and balance the sweetness.
  7. Bake: Bake for 9–12 minutes until the cookies develop shiny crackly tops and the edges are set while the centers still look slightly soft. Do not overbake or the cookies will lose their fudgy texture.
  8. Cool and serve: Let the cookies cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely. Serve slightly warm for extra gooey chocolate centers.

NOTES
Tips: Brownie mix cookies are all about texture — slightly underbaking them keeps the centers soft, chewy, and fudgy like a perfect brownie. Adding a little flour helps stabilize the dough so the cookies hold their shape while still staying rich and tender. If the dough feels too sticky let it rest for 10 minutes before scooping. Different brownie mixes may vary slightly in size and sweetness so adjust the flour by a tablespoon if needed for consistency. Chocolate chips add pockets of melted chocolate while chopped nuts bring crunch and balance to the soft texture. For even richer cookies mix in white chocolate chips, peanut butter chips, or chunks of dark chocolate. These cookies pair perfectly with cold milk, coffee, or vanilla ice cream. Store in an airtight container at room temperature for up to 4 days where they stay wonderfully soft and chewy. They also freeze beautifully for up to 2 months — simply thaw at room temperature or warm briefly in the microwave for fresh-from-the-oven texture.
