Cider Braised Pot Roast with Crispy Sage Butter Potatoes

This Cider Braised Pot Roast is the ultimate comfort food. Beef is slowly braised in apple cider with onions, garlic, herbs, and a rich savory broth until incredibly tender. It is served alongside crispy potatoes tossed with fragrant sage butter for a hearty meal full of warm, comforting flavors.

Ingredients

For the Pot Roast

  • 3–4 lb (1.4–1.8 kg) beef chuck roast
  • 2 tbsp olive oil
  • Salt and freshly ground black pepper, to taste
  • 1 large yellow onion, sliced
  • 4 cloves garlic, minced
  • 2 cups apple cider
  • 1½ cups beef broth
  • 2 tbsp tomato paste
  • 2 tbsp Worcestershire sauce
  • 2 tsp fresh thyme leaves
  • 2 sprigs fresh rosemary
  • 2 bay leaves
  • 3 large carrots, cut into chunks
  • 2 celery stalks, cut into chunks

For the Crispy Sage Butter Potatoes

  • 2 lb (900 g) baby potatoes
  • 4 tbsp unsalted butter
  • 10–12 fresh sage leaves
  • 2 cloves garlic, finely minced
  • Salt and black pepper, to taste
  • 1 tbsp olive oil

Directions

1. Prepare the Beef

Preheat the oven to 325°F (165°C).

Pat the chuck roast dry with paper towels and season generously on all sides with salt and black pepper.

Heat the olive oil in a large Dutch oven over medium-high heat. Add the roast and sear for about 4–5 minutes per side, until deeply browned.

Transfer the roast to a plate.

2. Build the Braising Base

Reduce the heat to medium and add the sliced onion to the same pot.

Cook for 4–5 minutes until softened and lightly browned. Add the garlic and tomato paste and cook for another minute.

Pour in the apple cider, scraping the browned bits from the bottom of the pot.

Add the beef broth, Worcestershire sauce, thyme, rosemary, and bay leaves. Stir to combine.

3. Braise the Pot Roast

Return the roast to the Dutch oven. Add the carrots and celery around the beef.

The liquid should come roughly halfway up the roast. If necessary, add a little more beef broth.

Cover the pot with a lid and transfer it to the oven.

Cook for approximately 3–3½ hours, or until the beef is extremely tender and easily pulls apart with a fork.

Turn the roast once during cooking if desired.

4. Prepare the Potatoes

While the roast is cooking, boil the baby potatoes in salted water until they are just tender, about 12–15 minutes.

Drain well and allow them to steam dry for a few minutes.

Gently press or lightly crush each potato so that it has a rough, flattened surface. This helps create crispy edges.

5. Make the Sage Butter

Melt the butter in a large skillet over medium heat.

Add the fresh sage leaves and cook until the butter becomes fragrant and the sage leaves turn crisp.

Add the minced garlic and cook for about 30 seconds. Remove the skillet from the heat.

6. Crisp the Potatoes

Heat the olive oil in a large skillet or roasting pan over medium-high heat.

Add the potatoes in a single layer and cook until golden and crispy on the outside, turning occasionally.

Pour the sage butter over the potatoes and toss gently until they are well coated.

Season with salt and black pepper.

7. Finish the Roast

Remove the pot roast from the oven and let it rest for about 10–15 minutes.

Discard the rosemary stems and bay leaves.

If you want a thicker sauce, transfer the cooking liquid to a saucepan and simmer for several minutes until slightly reduced.

Slice or pull apart the tender beef and spoon some of the braising sauce over the top.

Serve with the crispy sage butter potatoes, carrots, and celery.

Sear the beef well: A deep brown crust adds much more flavor to the finished dish.
