Cheesy Sausage Crescent Roll-ups

Buttery, golden, and packed with savory flavor — these cheesy sausage crescent roll-ups are the ultimate easy comfort food. Flaky crescent dough wraps around seasoned sausage and melty cheese, baking into warm, handheld bites that are perfect for breakfast, brunch, snacks, or party appetizers. Simple ingredients, big flavor, and irresistible gooey centers make these a guaranteed crowd favorite.

INGREDIENTS
• 1 can refrigerated crescent roll dough (8-count)
• 1 pound breakfast sausage (mild or spicy)
• 1 cup shredded cheddar cheese
• 0.5 cup cream cheese, softened
• 1 teaspoon garlic powder
• 0.5 teaspoon black pepper
• 1 egg, beaten (for egg wash)
• Optional: chopped green onions or parsley for garnish

STEPS

  1. Preheat the oven: Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper or lightly grease it.
  2. Cook the sausage: In a skillet over medium heat cook the sausage until browned and fully cooked. Break it into small crumbles as it cooks. Drain excess grease and let cool slightly.
  3. Make the filling: In a bowl combine the cooked sausage, shredded cheddar cheese, cream cheese, garlic powder, and black pepper. Mix until thick, creamy, and evenly combined.
  4. Prepare the dough: Unroll the crescent dough and separate it into triangles along the perforated lines.
  5. Fill and roll: Spoon a portion of the sausage mixture onto the wide end of each triangle. Roll tightly toward the pointed end, sealing the filling inside.
  6. Arrange on tray: Place the roll-ups on the prepared baking sheet, seam side down, leaving space between each one.
  7. Brush with egg wash: Lightly brush the tops with beaten egg to help them bake into a golden, glossy finish.
  8. Bake: Bake for 12–15 minutes or until the crescent rolls are puffed and golden brown and the cheese is melted inside.
  9. Cool and serve: Let cool for 5 minutes before serving. Garnish with green onions or parsley if desired and serve warm.

NOTES
Tips: Letting the sausage cool slightly before mixing helps prevent the crescent dough from becoming too soft or difficult to roll. Cream cheese helps bind the filling and creates a creamy, rich texture inside each roll-up. For extra flavor, use spicy sausage or add a pinch of crushed red pepper flakes. You can also swap cheddar for pepper jack, mozzarella, or a cheese blend depending on preference. Be careful not to overfill the dough, or the roll-ups may burst during baking. These are best served warm when the cheese is gooey and the pastry is flaky and crisp. They can be made ahead and refrigerated before baking, then baked fresh when needed. Store leftovers in the refrigerator for up to 3 days and reheat in the oven or air fryer to restore crispiness. Perfect for game days, brunch spreads, or quick grab-and-go breakfasts.
