INGREDIENTS
• 2 large cucumbers, peeled and diced
• 8 ounces cream cheese, softened
• 1 cup sweetened condensed milk
• 0.5 cup fresh lime juice
• 1 tablespoon lime zest
• 1 teaspoon vanilla extract
• 1 cup whipped topping
• 0.5 cup crushed graham crackers or vanilla cookies
• Lime slices for garnish
• Extra lime zest for garnish

STEPS

  1. Prepare the cucumbers: Peel and dice the cucumbers into small bite-sized pieces. Pat dry with paper towels to remove excess moisture.
  2. Make the cream base: In a large bowl beat the softened cream cheese until smooth and fluffy.
  3. Add the flavorings: Mix in the sweetened condensed milk, lime juice, lime zest, and vanilla extract until completely smooth.
  4. Fold in the whipped topping: Gently fold the whipped topping into the lime mixture until light and airy.
  5. Chill the filling: Refrigerate the mixture for 20–30 minutes to allow it to thicken slightly.
  6. Assemble the cups: Layer cucumber pieces and lime cream mixture in clear serving cups, repeating until the cups are full.
  7. Add the topping: Sprinkle crushed graham crackers over the top and garnish with lime slices and additional lime zest.
  8. Serve chilled: Refrigerate for at least 1 hour before serving for the best flavor and texture.

NOTES
Tips: English cucumbers work especially well because they contain fewer seeds and have a milder flavor. Patting the cucumber dry helps prevent excess liquid from collecting in the cups. For a sweeter dessert, add a few tablespoons of powdered sugar to the filling. For extra crunch, top with crushed vanilla wafers, granola, or toasted coconut. These dessert cups are best served cold and can be made several hours ahead of time. Store covered in the refrigerator for up to 2 days. The combination of cool cucumber, tangy lime, and creamy filling creates a surprisingly refreshing dessert that’s perfect for summer entertaining.
