White Chocolate Haystacks

White Chocolate Haystacks are a classic no-bake treat that perfectly blends sweetness, crunch, and simplicity. With their rustic, nest-like appearance and irresistible texture, these little clusters have been a favorite at holiday tables, bake sales, and family gatherings for generations. Best of all, they require no oven and come together in minutes, making them ideal for busy days or last-minute desserts.

Ingredients (Makes about 20–24 haystacks)

  • 340 g (12 oz) white chocolate chips or chopped white chocolate
  • 170 g (2 cups) crunchy chow mein noodles
  • 60 g (1 cup) shredded coconut (sweetened or unsweetened)
  • ½ teaspoon vanilla extract

Optional Add-Ins

  • ½ cup chopped roasted peanuts or almonds
  • Colorful candy sprinkles for decoration

Detailed Instructions

1. Prepare Your Workspace

Line a large baking sheet with parchment paper or wax paper. Set it aside so it’s ready for shaping the haystacks once the mixture is combined.

Make sure all ingredients are measured and within reach, as the process moves quickly once the chocolate is melted.

2. Melt the White Chocolate

Place the white chocolate chips or chopped white chocolate in a heatproof bowl. Melt using one of the following methods:

  • Microwave method: Heat in 20–30 second intervals, stirring well after each interval, until smooth and fully melted.
  • Double boiler method: Place the bowl over a pot of gently simmering water, stirring constantly until melted.

Be careful not to overheat the chocolate, as white chocolate can scorch easily.

3. Add Flavoring

Once the chocolate is smooth, stir in the vanilla extract. Mix gently but thoroughly to evenly distribute the flavor.

4. Combine the Dry Ingredients

Add the chow mein noodles and shredded coconut to the melted chocolate. Using a spatula, fold everything together until the noodles and coconut are fully coated in white chocolate.

If using nuts or other add-ins, fold them in at this stage.

5. Form the Haystacks

Using a spoon or small cookie scoop, drop heaping spoonfuls of the mixture onto the prepared baking sheet. Shape lightly into small mounds, keeping a rustic, clustered look.

Leave a little space between each haystack to allow them to set properly.

6. Let Them Set

Allow the haystacks to sit at room temperature for 30–45 minutes, or until completely firm. For faster setting, you can place the tray in the refrigerator for 15–20 minutes.
