Ingredients
- 4 large flour tortillas (10-inch)
- 8 oz (225 g) cream cheese, softened
- ¼ cup sour cream or Greek yogurt
- 1 teaspoon ranch seasoning (or ½ tsp garlic powder + ½ tsp onion powder)
- ½ cup shredded cheddar cheese
- ½ cup finely chopped red bell pepper
- ½ cup finely chopped cucumber (seeds removed)
- ½ cup finely shredded carrots
- 2 green onions, finely chopped
- Salt and black pepper, to taste
Instructions
1. Make the Creamy Base
In a bowl, mix cream cheese, sour cream, and ranch seasoning until smooth and creamy.
2. Add the Veggies
Fold in bell pepper, cucumber, carrots, green onions, and shredded cheddar cheese. Stir until evenly combined.
3. Assemble the Roll Ups
Spread about ¼ of the mixture evenly over each tortilla, all the way to the edges.
4. Roll & Chill
Roll up the tortillas tightly, then wrap them in plastic wrap. Refrigerate for at least 30 minutes to firm up (this makes slicing easier).
5. Slice & Serve
Unwrap and cut each roll into 1-inch slices. Arrange on a platter and serve chilled.
