Smother-style pork chops are a Southern classic known for their tender texture and rich, flavorful gravy. The chops are first browned for extra flavor, then slowly cooked in a creamy onion gravy until they become melt-in-your-mouth soft. This comforting dish is perfect for family dinners or cozy evenings at home.
Ingredients
- 4 bone-in pork chops (about 1 inch thick)
- 1 teaspoon salt
- 1 teaspoon black pepper
- 1 teaspoon garlic powder
- 1 teaspoon paprika
- 2 tablespoons olive oil
- 1 large onion, thinly sliced
- 2 cloves garlic, minced
- 2 tablespoons all-purpose flour
- 2 cups chicken broth
- 1 cup heavy cream or whole milk
- 1 teaspoon dried thyme
- 1 teaspoon dried parsley
- Optional: 1 tablespoon butter for extra richness
Instructions
- Begin by preparing the pork chops. Pat them dry with paper towels to remove excess moisture. This helps them brown better.
- Season both sides of each pork chop with salt, black pepper, garlic powder, and paprika. Rub the seasoning into the meat to ensure even coverage.
- Place a large skillet over medium-high heat and add the olive oil. Let the oil heat for about 1 minute.
- When the oil is hot, carefully place the pork chops into the skillet. Brown each side for 3 to 4 minutes until they develop a deep golden crust. Do not fully cook them at this stage; they will finish cooking in the gravy. Once browned, transfer the pork chops to a plate and set aside.
- In the same skillet, add the sliced onions. Reduce the heat to medium and cook for 5 to 7 minutes, stirring occasionally, until the onions become soft and lightly browned.
- Add the minced garlic to the onions and cook for 1 minute, stirring to prevent burning.
- Sprinkle the flour over the onions and garlic. Stir well to coat everything with the flour, and cook for 1 to 2 minutes. This step helps the gravy thicken and removes the raw flour taste.
- Slowly pour the chicken broth into the skillet while stirring constantly. This helps the flour blend smoothly without lumps.
- Add the heavy cream (or milk), thyme, and parsley. Stir well until the gravy becomes smooth and begins to thicken slightly.
- Return the browned pork chops to the skillet, placing them into the gravy. Spoon a little gravy over the top of each chop.
- Reduce the heat to low, cover the skillet with a lid, and simmer for 25 to 30 minutes. During this time, the pork chops will become tender and the gravy will thicken.
- If you want a richer gravy, stir in the optional tablespoon of butter during the last few minutes of cooking.
- Once the pork chops are tender, remove from heat and let them sit for a few minutes to allow the flavors to settle.
