Pineapple Delight Dessert

This Pineapple Delight Dessert is a cool, creamy, no-bake treat with a buttery graham cracker crust, a light cream cheese layer, and a sweet pineapple topping. It’s simple to make and perfect for gatherings, holidays, or warm-weather days.

Ingredients

For the Crust

  • 2 cups graham cracker crumbs
  • 1/2 cup unsalted butter, melted
  • 1/4 cup granulated sugar

For the Cream Layer

  • 1 cup heavy whipping cream
  • 8 oz cream cheese, softened
  • 3/4 cup powdered sugar
  • 1 teaspoon vanilla extract

For the Pineapple Topping

  • 1 can (20 oz) crushed pineapple, drained well
  • 1/2 cup granulated sugar
  • 1 tablespoon cornstarch

Instructions

Prepare the Crust

  1. In a mixing bowl, combine graham cracker crumbs, melted butter, and granulated sugar. Stir until the mixture resembles wet sand.
  2. Press the mixture firmly into the bottom of an 8×8-inch pan. Use the back of a spoon or the bottom of a measuring cup to pack it tightly.
  3. Place the pan in the refrigerator while you prepare the next layers.

Make the Cream Layer

  1. In a separate bowl, whip the heavy cream until stiff peaks form. Set aside.
  2. In another large bowl, beat the softened cream cheese, powdered sugar, and vanilla extract until smooth and creamy.
  3. Gently fold the whipped cream into the cream cheese mixture until fully combined.
  4. Spread the cream layer evenly over the chilled graham cracker crust.

Prepare the Pineapple Topping

  1. In a small saucepan, combine the drained crushed pineapple, granulated sugar, and cornstarch.
  2. Cook over medium heat, stirring constantly, until the mixture thickens and begins to bubble. This usually takes about 5–7 minutes.
  3. Remove from heat and let the pineapple topping cool completely.

Assemble the Dessert

  1. Once the topping is cool, spread it evenly over the cream layer.
  2. Cover the pan and refrigerate for at least 3 hours, or until fully set.

Serve

  1. Cut into squares and serve chilled.
