Perfect Ribeye Steak

Juicy, flavorful, and tender — a perfectly cooked Ribeye Steak is the ultimate treat for any meat lover. Whether you’re cooking it in a cast-iron skillet or on the grill, this recipe guarantees a golden crust and melt-in-your-mouth texture every time.

Ingredients

  • 2 ribeye steaks (about 1 inch thick)
  • 2 tablespoons olive oil or melted butter
  • Salt (preferably coarse or kosher)
  • Freshly ground black pepper
  • 2–3 garlic cloves, smashed
  • 2–3 sprigs of fresh rosemary or thyme
  • 2 tablespoons butter (for basting)

Instructions

1. Prepare the Steaks

  • Take the steaks out of the fridge 30 minutes before cooking to bring them to room temperature.
  • Pat dry with paper towels — this helps create a perfect sear.
  • Rub with olive oil, then season generously with salt and pepper on both sides.

2. Pan-Searing Method

  1. Heat the pan: Place a heavy skillet (preferably cast iron) over high heat until very hot.
  2. Sear the steak: Add a little oil, then the steaks. Sear for 2–3 minutes per side without moving them.
  3. Add flavor: Reduce heat to medium. Add butter, garlic, and herbs.
  4. Baste: Tilt the pan and spoon melted butter over the steaks for another 1–2 minutes.
  5. Check doneness:
    • Rare: 120°F (49°C)
    • Medium-rare: 130°F (54°C)
    • Medium: 140°F (60°C)
  6. Rest: Transfer steaks to a plate and rest for 5–10 minutes before slicing.

3. Grilling Method (Optional)

  1. Preheat grill to high heat.
  2. Sear steaks for 2–3 minutes per side, then move to indirect heat and cook to desired doneness.
  3. Rest before serving.
