Ingredients
- 1 cup unsalted butter, softened
- 1 cup granulated sugar
- 1 large egg
- 1 teaspoon vanilla extract
- 2 ½ cups all-purpose flour
- ½ teaspoon baking powder
- ¼ teaspoon salt
- 1 cup chopped pecans
- Optional: powdered sugar for dusting
Instructions
Step 1: Preheat
Preheat your oven to 350°F (175°C).
Line a baking sheet with parchment paper or lightly grease it.
Step 2: Cream Butter and Sugar
In a large bowl, beat the softened butter and granulated sugar together until light and fluffy. Add the egg and vanilla extract, mixing until fully incorporated.
Step 3: Add Dry Ingredients
In a separate bowl, whisk together the flour, baking powder, and salt. Gradually add the dry ingredients to the butter mixture, stirring until just combined.
Step 4: Mix in Pecans
Fold in the chopped pecans evenly throughout the dough.
Step 5: Shape and Bake
Drop rounded tablespoons of dough onto the prepared baking sheet, spacing them about 2 inches apart. Flatten slightly with the back of a spoon.
Bake for 12–15 minutes, or until the edges are lightly golden.
Step 6: Cool and Serve
Allow cookies to cool on the baking sheet for 5 minutes before transferring to a wire rack. Dust with powdered sugar if desired and serve.
These cookies store well in an airtight container and make a perfect treat for gifting or snacking at home.
