Easy Taco Lasagna

If you love tacos and lasagna, this Easy Taco Lasagna brings the best of both worlds together! It’s layered with seasoned beef, gooey cheese, salsa, and tortillas for a deliciously hearty meal that’s perfect for weeknights or potlucks.


Ingredients

Instructions

  1. Preheat Oven
    Preheat to 375°F (190°C) and lightly grease a 9×13-inch baking dish.
  2. Cook the Beef
    In a skillet over medium heat, cook ground beef and onion until browned.
    Drain excess fat.
  3. Season
    Stir in taco seasoning and water, then simmer for 2–3 minutes until thickened.
    Add salsa, beans, and corn (if using). Mix well and remove from heat.
  4. Layer the Lasagna
    • Spread a thin layer of beef mixture on the bottom of the dish.
    • Add a layer of tortillas (cut to fit if needed).
    • Spread sour cream over tortillas.
    • Add another layer of beef mixture and sprinkle with cheese.
    • Repeat layers, finishing with beef and a generous topping of cheese.
  5. Bake
    Cover with foil and bake for 20 minutes.
    Uncover and bake an additional 5 minutes, until cheese is melted and bubbly.
  6. Cool & Serve
    Let rest for 10 minutes before slicing.
    Garnish with green onions or cilantro, and serve with extra salsa or sour cream.

  • Add a kick with jalapeños or spicy salsa.
