If you love tacos and lasagna, this Easy Taco Lasagna brings the best of both worlds together! It’s layered with seasoned beef, gooey cheese, salsa, and tortillas for a deliciously hearty meal that’s perfect for weeknights or potlucks.
Ingredients

Instructions
- Preheat Oven
Preheat to 375°F (190°C) and lightly grease a 9×13-inch baking dish. - Cook the Beef
In a skillet over medium heat, cook ground beef and onion until browned.
Drain excess fat. - Season
Stir in taco seasoning and water, then simmer for 2–3 minutes until thickened.
Add salsa, beans, and corn (if using). Mix well and remove from heat. - Layer the Lasagna
- Spread a thin layer of beef mixture on the bottom of the dish.
- Add a layer of tortillas (cut to fit if needed).
- Spread sour cream over tortillas.
- Add another layer of beef mixture and sprinkle with cheese.
- Repeat layers, finishing with beef and a generous topping of cheese.
- Bake
Cover with foil and bake for 20 minutes.
Uncover and bake an additional 5 minutes, until cheese is melted and bubbly. - Cool & Serve
Let rest for 10 minutes before slicing.
Garnish with green onions or cilantro, and serve with extra salsa or sour cream.
