Classic Peach Cobbler
This Classic Peach Cobbler is the ultimate comfort dessert — sweet, syrupy peaches baked beneath a golden, buttery crust that melts in your mouth. Best served warm with a scoop of vanilla ice cream!
Ingredients:
For the peach filling:
- 6–7 fresh peaches (about 5 cups), peeled and sliced
- ¾ cup granulated sugar
- ¼ cup brown sugar
- 1 tsp lemon juice
- 1 tsp vanilla extract
- 1 tsp cinnamon (optional)
- 1 tbsp cornstarch
For the cobbler topping:
- 1 cup all-purpose flour
- 1 cup granulated sugar
- 1½ tsp baking powder
- ¼ tsp salt
- 1 cup milk
- ½ cup (1 stick) unsalted butter, melted
Instructions:
- Preheat oven: to 375°F (190°C).
- Prepare the peaches: In a medium saucepan, combine sliced peaches, sugars, lemon juice, vanilla, and cinnamon. Cook over medium heat for 5–7 minutes until the peaches release their juices. Stir in cornstarch to thicken slightly. Remove from heat.
- Make the batter: In a separate bowl, whisk together flour, sugar, baking powder, and salt. Add milk and stir until smooth.
- Assemble: Pour the melted butter into a 9×13-inch baking dish. Pour the batter evenly over the butter (don’t stir!). Spoon the peach mixture gently on top — the batter will rise around the peaches as it bakes.
- Bake: for 35–40 minutes, or until the top is golden and bubbly.
- Cool slightly: before serving warm with ice cream or whipped cream.
Tips:
- You can substitute canned peaches (drained) when fresh ones aren’t in season.
- Add a pinch of nutmeg for a richer, spiced flavor.
- For extra crispness, sprinkle a bit of sugar on top before baking.
