Ingredients
- 2 cups all-purpose flour
- 1 cup granulated sugar
- 1 cup unsalted butter, softened
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 teaspoon baking powder
- 1/4 teaspoon salt
- 3/4 cup raspberry or apricot jam
Instructions
1. Preheat the Oven
Preheat your oven to 350°F (175°C). Grease a 9×13-inch baking dish or line it with parchment paper.
2. Prepare the Dough
In a large bowl, cream together the softened butter and sugar until light and fluffy.
Add the eggs one at a time, mixing well after each addition.
Stir in the vanilla extract.
3. Mix Dry Ingredients
In a separate bowl, whisk together the flour, baking powder, and salt.
Gradually add the dry ingredients to the butter mixture, mixing until a soft dough forms.
4. Form the Base
Press about two-thirds of the dough evenly into the bottom of the prepared baking dish to create the crust.
5. Add the Jam Layer
Spread the jam evenly over the dough, leaving a small border around the edges to prevent sticking.
6. Add the Topping
Crumble the remaining dough evenly over the jam layer, covering it as much as possible.
7. Bake
Bake for 30–35 minutes, or until the top is lightly golden and set.
8. Cool and Serve
Allow the bars to cool completely before slicing.
Cut into squares or rectangles and serve.
