Cheesy Pan-Fried Zucchini Rounds

Zucchini, sliced into ¼-inch rounds – 2 medium
Olive oil – 2 tablespoons

Instructions
Prepare the zucchini
Wash the zucchini thoroughly and slice them into even ¼-inch thick rounds. Lay them out and season both sides lightly with salt and pepper.
Cook the zucchini
Heat the olive oil in a large skillet over medium heat. Once the oil is hot, arrange the zucchini slices in a single layer. Cook for 2–3 minutes per side, or until each round turns golden brown and becomes tender. Work in batches if needed.
Add the cheese
