Mongolian Ground Beef Noodles

Mongolian Ground Beef Noodles is a quick, flavorful dish inspired by classic Mongolian beef, made easy with ground beef and tender noodles coated in a rich, savory-sweet sauce. It’s perfect for busy weeknights when you want big flavor with minimal effort.

Ingredients

  • 1 pound ground beef
  • 8 oz noodles (lo mein, spaghetti, or linguine)
  • 1 tablespoon vegetable oil
  • 3 cloves garlic, minced
  • 1 teaspoon fresh ginger, minced
  • 1/3 cup soy sauce
  • 1/3 cup brown sugar
  • 1/2 cup beef broth or water
  • 1 tablespoon cornstarch
  • 1 teaspoon sesame oil
  • 1/4 teaspoon red pepper flakes (optional)
  • 1/2 cup green onions, sliced
  • Sesame seeds for garnish (optional)

Instructions

1. Cook the Noodles
Bring a large pot of salted water to a boil.
Cook the noodles according to package instructions until al dente.
Drain and set aside.

2. Brown the Beef
Heat vegetable oil in a large skillet over medium-high heat.
Add the ground beef and cook, breaking it apart, until browned and fully cooked.
Drain excess grease if needed.

3. Add Aromatics
Reduce heat to medium.
Add the garlic and ginger to the beef and cook for about 30 seconds until fragrant.

4. Make the Sauce
In a small bowl, whisk together soy sauce, brown sugar, beef broth, cornstarch, sesame oil, and red pepper flakes if using.
Pour the sauce into the skillet and stir well.

5. Thicken the Sauce
Let the sauce simmer for 2–3 minutes, stirring constantly, until it thickens and coats the beef evenly.

6. Combine with Noodles
Add the cooked noodles to the skillet.
Toss gently until the noodles are fully coated in the sauce.

7. Finish and Serve
Stir in the sliced green onions.
Serve hot, garnished with sesame seeds if desired.
