Mom’s Classic Texas Christmas Dip is the kind of appetizer that shows up at every holiday gathering and disappears faster than the presents under the tree. Warm, creamy, a little spicy, and deeply comforting, this dip is perfect with tortilla chips and just as good scooped onto crackers or bread. It’s simple, crowd-pleasing, and guaranteed to bring people back for “just one more bite.”
Ingredients
1 lb breakfast sausage or ground beef
1 (10 oz) can Rotel tomatoes with green chilies, undrained
1 (8 oz) block cream cheese, cubed
1 cup shredded cheddar cheese
½ teaspoon garlic powder
½ teaspoon onion powder
Optional chopped green onions or jalapeños for topping
Instructions
Place the sausage or ground beef in a large skillet over medium heat. Break it apart as it cooks, stirring frequently, until fully browned and no pink remains. This usually takes about 6–8 minutes.
Once cooked, carefully drain off excess grease to keep the dip creamy and not oily. Return the meat to the skillet and reduce the heat to low.
Add the cubed cream cheese directly to the warm meat. Stir slowly and continuously, allowing the cream cheese to melt gradually. This helps create a smooth, lump-free base.
Pour in the entire can of Rotel tomatoes with their juices. Stir well so the tomatoes and chilies distribute evenly throughout the dip.
Sprinkle in the garlic powder and onion powder. Continue stirring over low heat until everything is fully melted, creamy, and well combined.
Add the shredded cheddar cheese a handful at a time, stirring between additions. Let each handful melt completely before adding more to ensure a rich, smooth texture.
Once the dip is thick, creamy, and bubbling gently, remove from heat. Taste and adjust seasoning if needed.
Transfer to a serving bowl and top with chopped green onions or jalapeños if desired.
Serve warm with tortilla chips, crackers, or sliced bread.
