Mandarin Orange Cake with Pineapple Coconut Frosting

Ingredients

For the Cake

  • 1 box yellow cake mix
  • 4 large eggs
  • 1 cup vegetable oil
  • 1 can (15 oz) mandarin oranges with juice
  • 1 teaspoon vanilla extract (optional)

For the Pineapple Coconut Frosting

  • 1 container (8 oz) Cool Whip or whipped topping
  • 1 can (20 oz) crushed pineapple with juice
  • 1 box (3.4 oz) instant vanilla pudding mix
  • 1/2 cup shredded coconut (optional but delicious)

Instructions

1. Make the Cake

  1. Preheat oven to 350°F (175°C).
  2. In a large bowl, combine:
    • Cake mix
    • Eggs
    • Oil
    • Entire can of mandarin oranges with juice
  3. Beat or whisk until the oranges break apart slightly and the batter is smooth.
  4. Pour into a greased 9Ɨ13-inch baking dish.
  5. Bake for 25–30 minutes, or until a toothpick comes out clean.
  6. Let the cake cool completely before frosting.

2. Make the Frosting

  1. In a bowl, mix together:
    • Cool Whip
    • Crushed pineapple with juice
    • Dry pudding mix
    • Coconut (if using)
  2. Stir until thick and fluffy.
  3. Spread evenly over the cooled cake.

3. Chill & Serve

Refrigerate the cake for at least 2 hours.
This makes the frosting set and the flavors blend beautifully.
