Ingredients

  • 6 slices low carb or keto-friendly bread
  • 4 tbsp unsalted butter, softened
  • 2 cloves garlic, finely minced
  • ½ tsp garlic powder
  • ½ tsp dried parsley
  • ½ cup shredded mozzarella cheese
  • ¼ cup grated Parmesan cheese
  • Salt, to taste

Instructions

  1. Prepare the oven and pan
    Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper or foil.
  2. Make the garlic butter
    In a small bowl, mix the softened butter, minced garlic, garlic powder, dried parsley, and a pinch of salt until well combined.
  3. Assemble the toast
    Lay the bread slices on the prepared baking sheet. Spread the garlic butter generously over each slice, covering edge to edge.
  4. Add cheese
    Sprinkle mozzarella evenly over the buttered bread, then finish with Parmesan for extra flavor.
  5. Bake
    Bake for 8–10 minutes, until the cheese is melted and bubbly. For a golden top, switch to broil for 1–2 minutes, watching closely.
