Ingredients
- 1 lb (450 g) ground beef (or half beef, half turkey)
- 1 large egg
- ½ cup almond flour (or crushed pork rinds for extra low carb)
- ¼ cup grated Parmesan cheese
- 1 tsp salt
- ½ tsp black pepper
- 1 tsp garlic powder
- 1 tsp onion powder
- ½ tsp paprika
- 1 tbsp sugar-free ketchup (optional)
- 4 oz mozzarella or cheddar cheese, cut into small cubes
- Cooking spray or oil, for greasing
Instructions
- Prepare the oven
Preheat the oven to 375°F (190°C). Lightly grease a mini muffin pan or line a baking sheet with parchment paper. - Mix the meatloaf base
