Low Carb Cheesy Stuffed Meatloaf Bites

These Low Carb Cheesy Stuffed Meatloaf Bites are juicy, flavorful, and filled with gooey melted cheese—all without the extra carbs. Perfect as a weeknight dinner, party appetizer, or meal-prep favorite, they deliver classic meatloaf comfort in a bite-sized form.

Ingredients

  • 1 lb (450 g) ground beef (or half beef, half turkey)
  • 1 large egg
  • ½ cup almond flour (or crushed pork rinds for extra low carb)
  • ¼ cup grated Parmesan cheese
  • 1 tsp salt
  • ½ tsp black pepper
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • ½ tsp paprika
  • 1 tbsp sugar-free ketchup (optional)
  • 4 oz mozzarella or cheddar cheese, cut into small cubes
  • Cooking spray or oil, for greasing

Instructions

  1. Prepare the oven
Preheat the oven to 375°F (190°C). Lightly grease a mini muffin pan or line a baking sheet with parchment paper.
  2. Mix the meatloaf base
In a large bowl, combine the ground meat, egg, almond flour, Parmesan cheese, salt, black pepper, garlic powder, onion powder, paprika, and ketchup (if using). Mix gently until just combined—do not overmix to keep the bites tender.
  3. Stuff with cheese
Scoop about 1½ tablespoons of the meat mixture and flatten it slightly in your hand. Place a cube of cheese in the center, then wrap the meat around it, sealing well. Roll into a ball.
  4. Shape and arrange
Place each stuffed meatball into the prepared muffin pan or onto the baking sheet, leaving a little space between them.
  5. Bake
Bake for 18–22 minutes, or until the meat is fully cooked and lightly browned. For extra color, broil for the last 2 minutes, watching closely.
  6. Rest and serve
Let the meatloaf bites rest for 5 minutes before serving so the cheese sets slightly. Serve warm.

✨ Tip: These bites pair perfectly with a low-carb marinara or a creamy garlic dip and reheat beautifully for meal prep.
