Ingredients (Makes one 9×13-inch pan)
- ¾ cup honey
- ½ cup brown sugar
- ½ cup unsalted butter
- 1 large egg
- 1 tsp vanilla extract
- 2 cups all-purpose flour
- 1 tsp baking soda
- 1½ tsp ground cinnamon
- ½ tsp ground cloves
- ½ tsp ground nutmeg
- ½ tsp ground ginger
- ¼ tsp salt
- ½ cup chopped almonds or hazelnuts (optional)
- ¼ cup candied orange or lemon peel (optional)
Optional glaze:
- 1 cup powdered sugar
- 2–3 tbsp milk or water
- ½ tsp vanilla extract
Instructions
- Heat honey mixture:
- In a saucepan, gently heat honey, brown sugar, and butter until melted and smooth.
- Remove from heat and let cool slightly.
- Mix wet ingredients:
- Stir egg and vanilla into the warm honey mixture.
- Combine dry ingredients:
- In a bowl, whisk flour, baking soda, spices, and salt.
- Make the batter:
- Gradually mix dry ingredients into wet ingredients until smooth.
- Fold in nuts and candied peel if using.
- Bake:
- Spread batter evenly into a greased or lined 9×13-inch pan.
- Bake at 350°F (175°C) for 20–25 minutes, until set and lightly golden.
- Glaze (optional):
- Whisk glaze ingredients and spread over warm bars for a shiny finish.
- Cool & slice:
- Cool completely before cutting into bars.
