Family-Favorite Homemade Lebkuchen Bars

Soft, spiced German-style honey bars with warm holiday flavors—perfect for sharing, gifting, and cozy family moments.

Ingredients (Makes one 9×13-inch pan)

  • ¾ cup honey
  • ½ cup brown sugar
  • ½ cup unsalted butter
  • 1 large egg
  • 1 tsp vanilla extract
  • 2 cups all-purpose flour
  • 1 tsp baking soda
  • 1½ tsp ground cinnamon
  • ½ tsp ground cloves
  • ½ tsp ground nutmeg
  • ½ tsp ground ginger
  • ¼ tsp salt
  • ½ cup chopped almonds or hazelnuts (optional)
  • ¼ cup candied orange or lemon peel (optional)

Optional glaze:

  • 1 cup powdered sugar
  • 2–3 tbsp milk or water
  • ½ tsp vanilla extract

Instructions

  1. Heat honey mixture:
    • In a saucepan, gently heat honey, brown sugar, and butter until melted and smooth.
    • Remove from heat and let cool slightly.
  2. Mix wet ingredients:
    • Stir egg and vanilla into the warm honey mixture.
  3. Combine dry ingredients:
    • In a bowl, whisk flour, baking soda, spices, and salt.
  4. Make the batter:
    • Gradually mix dry ingredients into wet ingredients until smooth.
    • Fold in nuts and candied peel if using.
  5. Bake:
    • Spread batter evenly into a greased or lined 9×13-inch pan.
    • Bake at 350°F (175°C) for 20–25 minutes, until set and lightly golden.
  6. Glaze (optional):
    • Whisk glaze ingredients and spread over warm bars for a shiny finish.
  7. Cool & slice:
    • Cool completely before cutting into bars.
