Whether you grew up eating salmon patties at grandma’s table or you’re discovering them for the first time, this recipe delivers that classic crunch with a moist, savory center every single time.
Ingredients
- 1 can (14–15 oz) salmon, drained (bones and skin removed if desired)
- 1 large egg
- ½ cup breadcrumbs (or crushed crackers)
- ¼ cup finely chopped onion
- 2 tablespoons chopped parsley (optional)
- 1 tablespoon lemon juice
- ½ teaspoon garlic powder
- ½ teaspoon paprika
- ½ teaspoon salt
- ¼ teaspoon black pepper
- 2–3 tablespoons oil, for frying
Instructions
1. Prepare the salmon
Drain the canned salmon well. If the can contains skin or bones, remove them if you prefer (the bones are soft and edible, but optional). Place the salmon in a medium bowl and flake it gently with a fork.
2. Build the mixture
Add the egg, breadcrumbs, chopped onion, parsley, lemon juice, garlic powder, paprika, salt, and black pepper to the bowl with the salmon.
3. Mix gently
Using a fork or your hands, mix everything together just until combined. Do not overmix — the mixture should hold together but still feel light and moist.
4. Shape the patties
Divide the mixture into 6–8 equal portions. Shape each portion into a patty about ½-inch thick. If the mixture feels too soft, refrigerate for 10 minutes to help them firm up.
5. Heat the oil
Heat oil in a large skillet over medium heat. The oil should be hot but not smoking — a small breadcrumb should sizzle immediately when added.
6. Fry until crispy
Carefully place the patties in the skillet, leaving space between them. Cook for 3–4 minutes per side, or until deeply golden and crispy. Flip gently to avoid breaking.
7. Drain and rest
Transfer the cooked patties to a plate lined with paper towels. Let them rest for 2 minutes — this helps them set and stay crispy.
