Cozy Grandma’s Igloo Bites are a no-bake, old-fashioned treat that’s cool, creamy, and delightfully nostalgic. Made with a fluffy coconut base and studded with sweet mix-ins, these chilled bites are perfect for holidays, potlucks, or anytime you crave a comforting vintage dessert.
Ingredients
- 1 package (8 oz / 225 g) cream cheese, softened
- ½ cup powdered sugar
- 1 tsp vanilla extract
- 2 cups sweetened shredded coconut
- 1 cup mini marshmallows
- ½ cup chopped pecans or walnuts (optional)
- Extra shredded coconut, for rolling
Instructions
- Make the creamy base
In a large bowl, beat the softened cream cheese until smooth and fluffy. Add the powdered sugar and vanilla extract, mixing until fully combined and creamy. - Add the mix-ins
Stir in the shredded coconut, mini marshmallows, and chopped nuts (if using). The mixture should be thick but soft enough to scoop. - Chill the mixture
Cover the bowl and refrigerate for 30–45 minutes, just until firm enough to handle easily. - Shape the bites
Scoop tablespoon-sized portions and roll them into small balls. Roll each ball in extra shredded coconut to fully coat, giving them their “igloo” look. - Final chill and serve
Place the bites on a lined tray and refrigerate for another 30 minutes to set. Serve chilled.
