Cozy Grandma’s Igloo Bites

Cozy Grandma’s Igloo Bites are a no-bake, old-fashioned treat that’s cool, creamy, and delightfully nostalgic. Made with a fluffy coconut base and studded with sweet mix-ins, these chilled bites are perfect for holidays, potlucks, or anytime you crave a comforting vintage dessert.

Ingredients

  • 1 package (8 oz / 225 g) cream cheese, softened
  • ½ cup powdered sugar
  • 1 tsp vanilla extract
  • 2 cups sweetened shredded coconut
  • 1 cup mini marshmallows
  • ½ cup chopped pecans or walnuts (optional)
  • Extra shredded coconut, for rolling

Instructions

  1. Make the creamy base
    In a large bowl, beat the softened cream cheese until smooth and fluffy. Add the powdered sugar and vanilla extract, mixing until fully combined and creamy.
  2. Add the mix-ins
    Stir in the shredded coconut, mini marshmallows, and chopped nuts (if using). The mixture should be thick but soft enough to scoop.
  3. Chill the mixture
    Cover the bowl and refrigerate for 30–45 minutes, just until firm enough to handle easily.
  4. Shape the bites
    Scoop tablespoon-sized portions and roll them into small balls. Roll each ball in extra shredded coconut to fully coat, giving them their “igloo” look.
  5. Final chill and serve
    Place the bites on a lined tray and refrigerate for another 30 minutes to set. Serve chilled.

Tip: For extra flavor, add a spoonful of crushed pineapple (well drained) or a few white chocolate chips for a fun variation.
