Ingredients
- 1 lb (450 g) ground beef
- 2 cups small shell pasta (conchitas)
- 2 tablespoons vegetable oil
- ½ onion, finely chopped
- 2 cloves garlic, minced
- 1 (15 oz) can tomato sauce
- 1 (14.5 oz) can diced tomatoes
- 2 cups beef broth (or water + bouillon cube)
- 1 teaspoon cumin
- 1 teaspoon chili powder
- ½ teaspoon paprika
- ½ teaspoon oregano
- Salt and pepper, to taste
- Chopped fresh cilantro, for garnish
Instructions
- Toast the pasta:
In a large skillet or deep pan, heat the oil over medium heat. Add the uncooked pasta shells and toast them, stirring frequently, until golden brown. This step adds a nutty flavor and helps the pasta hold up in the sauce. Remove the toasted shells and set aside. - Cook the beef:
In the same pan, add the ground beef and cook until browned. Drain any excess grease. Add chopped onion and garlic, and sautƩ for about 2 minutes until fragrant and softened. - Add seasonings:
Stir in cumin, chili powder, paprika, oregano, salt, and pepper. Mix well to coat the beef in the spices. - Add tomatoes and broth:
Pour in the tomato sauce, diced tomatoes, and beef broth. Stir to combine and bring the mixture to a simmer. - Add the pasta:
Return the toasted pasta shells to the skillet. Stir well, reduce the heat to low, and cover. Let it simmer for 15ā20 minutes, stirring occasionally, until the pasta is tender and most of the liquid has been absorbed. - Adjust and serve:
Taste and adjust seasoning if needed. Garnish with chopped cilantro and serve hot.
