Ingredients
8 slices soft white sandwich bread
¼ cup brown sugar
2 tsp ground cinnamon
4 tbsp butter, melted
2 large eggs
¼ cup milk
1 tsp vanilla extract
Butter or oil, for cooking

Instructions
Prepare the bread
Trim the crusts from the bread slices. Use a rolling pin to flatten each slice.
Make the cinnamon filling
In a small bowl, mix the brown sugar and cinnamon. Brush each bread slice lightly with melted butter, then sprinkle evenly with the cinnamon sugar mixture.
Roll up
Starting from one end, tightly roll each slice into a log.
Prepare the egg mixture
In a shallow bowl, whisk together the eggs, milk, and vanilla extract.
Dip the roll-ups
Dip each roll-up into the egg mixture, coating all sides lightly.
Cook until golden
