Cheesy Monterey Sausage Pie

This Cheesy Monterey Sausage Pie is a comforting, crowd-pleasing dish that’s perfect for breakfast, brunch, or a cozy family dinner. Savory sausage, creamy eggs, and melty Monterey Jack cheese come together in a flaky pie crust for a hearty, satisfying slice every time.

Ingredients

  • 1 unbaked 9-inch pie crust
  • 1 lb (450 g) breakfast sausage
  • 1½ cups shredded Monterey Jack cheese
  • 4 large eggs
  • 1 cup milk or half-and-half
  • ½ tsp salt
  • ½ tsp black pepper
  • ¼ tsp paprika
  • ½ tsp dried parsley or chives

Instructions

  1. Preheat and prepare
    Preheat the oven to 375°F (190°C). Place the pie crust into a 9-inch pie dish and crimp the edges.
  2. Cook the sausage
    In a skillet over medium heat, cook the sausage until fully browned, breaking it into crumbles. Drain excess grease and allow to cool slightly.
  3. Assemble the pie
    Spread the cooked sausage evenly over the bottom of the pie crust. Sprinkle the shredded Monterey Jack cheese over the sausage.
  4. Mix the egg filling
    In a bowl, whisk together the eggs, milk, salt, black pepper, paprika, and herbs until smooth.
  5. Fill the pie
    Carefully pour the egg mixture over the sausage and cheese, making sure everything is evenly covered.
  6. Bake
    Bake for 40–45 minutes, until the center is set and the top is lightly golden. If the crust browns too quickly, cover the edges loosely with foil.
  7. Rest and serve
    Let the pie rest for 10 minutes before slicing. Serve warm.
