Golden, fluffy, and irresistibly cheesy
Cheesy Mashed Potato Puffs are the perfect way to turn leftover mashed potatoes into something magical. Light and airy on the inside with crispy edges, these bite-sized puffs are packed with melty cheese and baked until beautifully golden—ideal as a side dish, snack, or party appetizer.
Ingredients
2 cups mashed potatoes (cold or room temperature)
1 cup shredded cheddar or mozzarella cheese
2 large eggs
¼ cup all-purpose flour
½ teaspoon salt
½ teaspoon black pepper
¼ teaspoon garlic powder
Optional: chopped chives or parsley
Instructions
Preheat the oven to 400°F (205°C). Generously grease a mini muffin pan so the puffs release easily and get crisp edges.
In a large bowl, combine the mashed potatoes, shredded cheese, eggs, flour, salt, black pepper, and garlic powder. Mix thoroughly until the mixture is smooth and holds its shape. Fold in chopped herbs if using.
Spoon the mixture into the prepared muffin pan, filling each cup nearly to the top. Smooth the tops lightly with the back of a spoon to help them bake evenly.
Bake for 20–25 minutes, or until the puffs are puffed, golden brown, and set in the center. The edges should be lightly crisp.
Remove the pan from the oven and allow the puffs to cool for 5 minutes. Gently loosen the edges with a knife and lift them out.
Serve warm as a side dish or appetizer. They’re best enjoyed fresh while the outside is crisp and the inside is fluffy.
Tips
Use cold mashed potatoes for easier shaping.
Freshly shredded cheese melts best.
Serve with sour cream or dipping sauce for extra flavor.
