Ingredients
1 pound ground beef
½ teaspoon salt
½ teaspoon black pepper
½ teaspoon garlic powder
½ teaspoon onion powder
1 cup shredded cheddar or American cheese
¼ cup finely diced onion
¼ cup diced pickles
1 tablespoon ketchup
1 teaspoon mustard
12–15 spring roll wrappers
For cooking
Oil for frying or cooking spray for baking
Optional for serving
Ketchup, burger sauce, or special sauce
Instructions
Start by cooking the beef. Heat a skillet over medium heat and add the ground beef. Break it up with a spoon and cook until fully browned, about 6–8 minutes. Drain excess grease.
Season the cooked beef with salt, black pepper, garlic powder, and onion powder. Stir well so the seasoning is evenly distributed. Remove from heat and allow the beef to cool slightly so it doesn’t melt the wrappers.
Once cooled, stir in the shredded cheese, diced onion, pickles, ketchup, and mustard. Mix until everything is evenly combined and the filling holds together.
Lay a spring roll wrapper on a flat surface in a diamond shape. Spoon 2–3 tablespoons of filling near the bottom corner. Fold the bottom corner over the filling, fold in the sides tightly, and roll upward into a snug cylinder. Lightly moisten the top edge with water to seal. Repeat with remaining wrappers and filling.
For frying, heat oil in a deep skillet to medium heat. Fry the spring rolls in batches, turning occasionally, for 3–4 minutes until golden brown and crispy. Remove and drain on paper towels.
For baking, preheat the oven to 400°F (205°C). Place the rolls on a lined baking sheet, lightly spray with cooking spray, and bake for 18–22 minutes, turning once halfway through, until crisp and golden.
Let the spring rolls rest for a couple of minutes before serving so the filling sets slightly.
Serve hot with ketchup or burger sauce for dipping.
Tips
Cool the beef before rolling to prevent wrapper tears.
Roll tightly to keep cheese from leaking.
These freeze well before cooking for easy make-ahead snacks.
