Crispy, golden, and irresistibly tender, Aunt Millie’s Picnic-Table Pork Schnitzel is the kind of dish that makes every gathering feel like a family reunion. Whether you’re hosting a backyard barbecue, packing lunch for a road trip, or preparing a comforting meal on a weeknight, this schnitzel delivers big flavor with simple ingredients
Ingredients
- 4 boneless pork cutlets (thinly pounded)
- 1 cup all-purpose flour
- 2 large eggs
- 1 tbsp Dijon mustard
- 1 ½ cups breadcrumbs (plain or seasoned)
- ½ tsp garlic powder
- ½ tsp paprika
- Salt & black pepper, to taste
- Oil for frying (vegetable or canola)
- Lemon wedges, to serve
- Fresh parsley (optional)
Instructions
1. Prep the Cutlets
Place each piece of pork between plastic wrap and pound gently until about ¼-inch thick. Season both sides with salt and pepper.
2. Set Up the Breading Station
Prepare three shallow bowls:
- Bowl 1: Flour
- Bowl 2: Eggs + Dijon mustard (whisk together)
- Bowl 3: Breadcrumbs + garlic powder + paprika
3. Bread the Pork
Dredge each cutlet in flour, shaking off excess.
Dip into the egg mixture.
Press firmly into the breadcrumb mixture until fully coated.
4. Fry to Golden Perfection
Heat about ½ inch of oil in a large skillet over medium-high heat.
Fry each schnitzel for 2–3 minutes per side, or until golden brown and cooked through.
Transfer to a wire rack or paper towels to drain.
5. Serve
Top with a squeeze of fresh lemon and a sprinkle of parsley. Serve warm — but it’s equally delicious cold on a picnic table.
