Chocolate Rice Krispie Balls

Ingredients:

  • 3 cups Rice Krispies cereal
  • 1 cup creamy peanut butter
  • 1/2 cup honey or light corn syrup
  • 1/2 cup sugar
  • 1 1/2 cups semi-sweet chocolate chips
  • 1 tbsp butter or coconut oil (optional, for smoother coating)

Instructions:

  1. Prepare a baking sheet: Line a tray with parchment or wax paper and set aside.
  2. Heat the mixture: In a saucepan over medium heat, combine peanut butter, honey (or corn syrup), and sugar. Stir constantly until the mixture begins to bubble and the sugar dissolves. Remove from heat.
  3. Mix with cereal: Pour the hot mixture over the Rice Krispies in a large bowl. Stir gently until all the cereal is evenly coated.
  4. Shape into balls: Using a spoon or your hands, form the mixture into 1-inch balls. Place them on the prepared tray and chill in the refrigerator for 15–20 minutes to firm up.
  5. Melt the chocolate: In a microwave-safe bowl, melt the chocolate chips (and butter or coconut oil if using) in 30-second intervals, stirring until smooth.
  6. Dip the balls: Using a fork or skewer, dip each Rice Krispie ball into the melted chocolate, allowing excess to drip off. Place them back on the tray.
  7. Chill: Refrigerate for another 30 minutes, or until the chocolate coating is set.

Pro Tip: For extra flair, drizzle white chocolate on top or sprinkle with crushed peanuts before the chocolate hardens. Store in an airtight container in the fridge for up to a week.
