Ingredients:
- 3 cups Rice Krispies cereal
- 1 cup creamy peanut butter
- 1/2 cup honey or light corn syrup
- 1/2 cup sugar
- 1 1/2 cups semi-sweet chocolate chips
- 1 tbsp butter or coconut oil (optional, for smoother coating)
Instructions:
- Prepare a baking sheet: Line a tray with parchment or wax paper and set aside.
- Heat the mixture: In a saucepan over medium heat, combine peanut butter, honey (or corn syrup), and sugar. Stir constantly until the mixture begins to bubble and the sugar dissolves. Remove from heat.
- Mix with cereal: Pour the hot mixture over the Rice Krispies in a large bowl. Stir gently until all the cereal is evenly coated.
- Shape into balls: Using a spoon or your hands, form the mixture into 1-inch balls. Place them on the prepared tray and chill in the refrigerator for 15ā20 minutes to firm up.
- Melt the chocolate: In a microwave-safe bowl, melt the chocolate chips (and butter or coconut oil if using) in 30-second intervals, stirring until smooth.
- Dip the balls: Using a fork or skewer, dip each Rice Krispie ball into the melted chocolate, allowing excess to drip off. Place them back on the tray.
- Chill: Refrigerate for another 30 minutes, or until the chocolate coating is set.
