Pecan Pie Cobbler

Ingredients:

  • 1 cup unsalted butter, melted (divided)
  • 2 cups pecans, roughly chopped
  • 1 1/2 cups self-rising flour
  • 1 1/2 cups granulated sugar
  • 1 1/2 cups milk
  • 1 tsp vanilla extract
  • 1 1/2 cups brown sugar, packed
  • 1 1/2 cups hot water

Instructions:

  1. Preheat oven: Set to 350°F (175°C). Pour 1/2 cup melted butter into the bottom of a 9×13-inch baking dish.
  2. Add pecans: Evenly scatter chopped pecans over the melted butter.
  3. Mix batter: In a mixing bowl, whisk together flour, granulated sugar, milk, and vanilla until smooth. Pour this batter evenly over the pecans—do not stir.
  4. Add brown sugar and butter: Sprinkle the brown sugar evenly over the top, then drizzle the remaining 1/2 cup melted butter on top.
  5. Pour hot water: Gently pour the hot water over the entire mixture—again, do not stir.
  6. Bake: Place in the oven and bake for 45–55 minutes, or until golden brown and bubbly. The cobbler will form a gooey, caramel-like layer underneath.
  7. Serve: Let cool slightly before serving. It’s delicious warm with a scoop of vanilla ice cream or a dollop of whipped cream.
