Brown Sugar Bacon-Wrapped Pork Tenderloin

Ingredients:

  • 1 pork tenderloin (about 1 to 1.5 lbs)
  • 8–10 slices of bacon
  • 2–3 tbsp brown sugar
  • 1 tbsp Dijon mustard (optional)
  • 1 tsp smoked paprika
  • 1/2 tsp garlic powder
  • 1/2 tsp salt
  • 1/4 tsp black pepper

Instructions:

  1. Preheat oven: Set to 400°F (200°C). Line a baking sheet with foil and place a wire rack on top.
  2. Season the pork: In a small bowl, mix brown sugar, paprika, garlic powder, salt, and pepper. Rub the mixture evenly over the tenderloin.
  3. Wrap with bacon: Tightly wrap bacon slices around the pork, overlapping slightly. If needed, secure with toothpicks.
  4. Add caramel glaze: Sprinkle a little extra brown sugar on top or brush lightly with Dijon mustard before baking for a sweet-savory glaze.
  5. Bake: Place on the rack and bake for 25–30 minutes, until the bacon is crispy and the pork reaches 145°F (63°C) internally.
  6. Caramelize: For an extra-crispy finish, broil for 2–3 minutes at the end.
  7. Rest and serve: Let rest for 5–10 minutes before slicing into medallions.

Tip: Pair with roasted vegetables or mashed potatoes for a comforting and elegant meal.
