Brown Sugar Bacon-Wrapped Pork Tenderloin
Ingredients:
- 1 pork tenderloin (about 1 to 1.5 lbs)
- 8–10 slices of bacon
- 2–3 tbsp brown sugar
- 1 tbsp Dijon mustard (optional)
- 1 tsp smoked paprika
- 1/2 tsp garlic powder
- 1/2 tsp salt
- 1/4 tsp black pepper
Instructions:
- Preheat oven: Set to 400°F (200°C). Line a baking sheet with foil and place a wire rack on top.
- Season the pork: In a small bowl, mix brown sugar, paprika, garlic powder, salt, and pepper. Rub the mixture evenly over the tenderloin.
- Wrap with bacon: Tightly wrap bacon slices around the pork, overlapping slightly. If needed, secure with toothpicks.
- Add caramel glaze: Sprinkle a little extra brown sugar on top or brush lightly with Dijon mustard before baking for a sweet-savory glaze.
- Bake: Place on the rack and bake for 25–30 minutes, until the bacon is crispy and the pork reaches 145°F (63°C) internally.
- Caramelize: For an extra-crispy finish, broil for 2–3 minutes at the end.
- Rest and serve: Let rest for 5–10 minutes before slicing into medallions.
