Slow Cooker Scalloped Potatoes

Ingredients:

  • 2 lbs potatoes, thinly sliced
  • 1 small onion, finely chopped
  • 3 tbsp butter
  • 3 tbsp all-purpose flour
  • 2 cups milk
  • 1 cup shredded cheddar cheese
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/4 tsp garlic powder
  • Optional: 1/2 cup grated Parmesan cheese or cooked ham for extra flavor

Instructions:

  1. Prepare the sauce: In a saucepan, melt butter over medium heat. Stir in flour and cook for 1 minute. Gradually whisk in milk, stirring until thickened. Add cheese, salt, pepper, and garlic powder. Stir until smooth and melted.
  2. Layer the ingredients: Grease the slow cooker. Layer half of the potatoes and onions, pour half of the sauce over them. Repeat with remaining potatoes and sauce.
  3. Cook: Cover and cook on low for 6–7 hours or high for 3–4 hours, until the potatoes are tender.
  4. Optional: Sprinkle with additional cheese and cook for 10 more minutes, until melted.
  5. Serve: Let it rest for a few minutes before serving warm.

Tip: Add diced ham or crumbled bacon between layers for a hearty main dish.
