Ingredients:

  • 1 lb ground beef
  • 4 cups diced potatoes
  • 1 cup chopped carrots
  • 1 cup chopped celery
  • 1 medium onion, diced
  • 1 can (10.5 oz) cream of mushroom soup
  • 1 cup milk
  • 1 cup shredded cheddar cheese
  • 1 tbsp butter
  • Salt and black pepper to taste
  • 1 tsp garlic powder
  • ½ tsp dried thyme (optional)

Instructions:

  1. Preheat Oven:
Preheat your oven to 375°F (190°C). Grease a 9×13-inch baking dish with butter or cooking spray.
  2. Cook the Beef:
In a large skillet, cook the ground beef over medium heat until browned. Drain any excess fat and set aside.
  3. SautƩ Vegetables:
In the same skillet, add butter, then sautĆ© the onion, celery, and carrots until softened (about 5–7 minutes).
  4. Combine Ingredients:
In a large bowl, mix the cooked beef, sautƩed vegetables, diced potatoes, cream of mushroom soup, milk, cheddar cheese, and seasonings (salt, pepper, garlic powder, thyme). Stir until everything is well coated.
  5. Assemble and Bake:
Pour the mixture into the prepared baking dish. Cover with foil and bake for 45 minutes.
  6. Finish and Serve:
Remove the foil, sprinkle extra cheese on top if desired, and bake for another 10–15 minutes until the top is golden and bubbly.
  7. Cool Slightly:
Let the casserole rest for 5–10 minutes before serving — it will thicken beautifully as it cools.

Pro Tips:

  • Add a pinch of nutmeg or paprika for extra warmth.
  • Substitute cream of chicken soup if you prefer a lighter flavor.
  • For a crispier top, broil for 2–3 minutes after baking.
  • This dish freezes well — portion leftovers into airtight containers for easy reheating later!
