Cheesy Carrot Flatbreads

Soft, golden, and full of flavor — these Cheesy Carrot Flatbreads are a fun and wholesome twist on traditional flatbreads. Grated carrots add natural sweetness and moisture, while melted cheese brings richness and a hint of indulgence. They’re perfect for pairing with soups, salads, or dips — or even enjoyed on their own as a quick snack!

Ingredients

  • 1 cup finely grated carrots (about 2 medium carrots)
  • 1 ½ cups all-purpose flour (plus extra for dusting)
  • ½ cup shredded cheddar cheese (or mozzarella for a milder flavor)
  • 2 tablespoons olive oil
  • 1 teaspoon baking powder
  • ½ teaspoon salt
  • ā…“ cup warm water (add more as needed)
  • ½ teaspoon garlic powder (optional, for extra flavor)
  • 1 tablespoon melted butter (for brushing after cooking)

Instructions

  1. Prepare the carrots: Peel and finely grate the carrots. Squeeze out any excess moisture using a paper towel or clean kitchen cloth.
  2. Mix the dough: In a large bowl, combine flour, baking powder, salt, and garlic powder. Add the grated carrots, shredded cheese, and olive oil. Mix well.
  3. Add water: Gradually add warm water and mix until a soft dough forms. Knead gently for 2–3 minutes until smooth and pliable.
  4. Rest the dough: Cover and let rest for 10–15 minutes to relax the gluten and make rolling easier.
  5. Shape the flatbreads: Divide the dough into 6–8 small balls. On a floured surface, roll each ball into a thin round or oval shape.
  6. Cook the flatbreads:
    • Heat a non-stick skillet or griddle over medium heat.
    • Cook each flatbread for about 1–2 minutes per side, or until golden brown spots appear.
  7. Brush and serve: Brush the warm flatbreads with melted butter for extra softness and flavor. Serve immediately.

Pro Tips

  • Add herbs like parsley, thyme, or chives to the dough for extra aroma.
  • For a crispier version, brush with olive oil and bake at 400°F (200°C) for 10–12 minutes instead of pan-cooking.
  • Use whole wheat flour or a mix of flours for a heartier, more nutritious version.
  • These flatbreads freeze well — just reheat in a dry skillet before serving.
