No Bake Chocolate Oat Bars

When you need a sweet fix without turning on the oven, these No Bake Chocolate Oat Bars are a lifesaver! Made with wholesome oats, creamy peanut butter, and a silky chocolate layer, they come together in minutes and taste like a homemade candy bar. Keep them in the fridge for an easy grab-and-go snack or dessert.

Ingredients

For the Oat Layer:

  • 1 cup (230 g) butter
  • 1/2 cup (100 g) packed brown sugar
  • 3 cups (270 g) quick oats
  • 1 tsp vanilla extract

For the Chocolate Layer:

  • 1 cup (175 g) semi-sweet chocolate chips
  • 1/2 cup (125 g) creamy peanut butter

Instructions

  1. Prepare the pan:
Line an 8×8-inch (20×20 cm) baking dish with parchment paper or lightly grease it for easy removal later.
  2. Make the oat mixture:
In a medium saucepan, melt butter over medium heat. Add brown sugar and stir until dissolved. Mix in oats and cook for 2–3 minutes, stirring constantly, until the oats are well coated and slightly toasted. Remove from heat and stir in vanilla extract.
  3. Press the base layer:
Pour about 2/3 of the oat mixture into the prepared pan. Press it firmly into an even layer using the back of a spoon or spatula. Reserve the remaining oat mixture for the top.
  4. Make the chocolate layer:
In a separate bowl, melt chocolate chips and peanut butter together (using a double boiler or microwave in 30-second intervals, stirring each time) until smooth and creamy.
  5. Assemble the bars:
Pour the melted chocolate mixture over the pressed oats and spread evenly. Then crumble and gently press the remaining oat mixture on top.
  6. Chill to set:
Refrigerate for 2–3 hours (or 30–40 minutes in the freezer) until firm.
  7. Cut and serve:
Lift out the bars using the parchment paper, slice into squares, and enjoy!

Pro Tips

  • Use rolled oats instead of quick oats for a chewier texture.
  • Make it vegan: Use dairy-free butter and vegan chocolate chips.
  • Add crunch: Mix in chopped nuts, coconut flakes, or crushed pretzels for extra flavor.
  • Storage: Keep bars in an airtight container in the fridge for up to 1 week or freeze for longer freshness.
  • Drizzle extra chocolate: Melt a few more chips and drizzle on top before chilling for a pretty finish.
