French Onion Meatloaf

For the Glaze:

Instructions

  1. Preheat Oven
    Set oven to 375°F (190°C) and line a loaf pan with parchment paper or lightly grease it.
  2. Caramelize Onions (if homemade)
    In a skillet, cook 2 large onions in butter over low heat for about 20 minutes, stirring until golden and sweet. Let cool slightly.
  3. Mix the Meatloaf
    In a large bowl, combine:
    • Ground beef
    • Onion soup mix
    • Caramelized onions
    • Eggs
    • Bread crumbs
    • Milk
    • Worcestershire sauce
    • Salt and pepper
    Mix gently with your hands until everything is just combined (don’t overmix).
  4. Shape & Fill
    Spread half of the meat mixture into the loaf pan.
    Sprinkle ½ cup of cheese in the center, then top with the remaining meat mixture, sealing the edges.
  5. Prepare the Glaze
    Whisk together ketchup, brown sugar, Dijon mustard, and Worcestershire sauce.
    Brush half of it over the top of the loaf.
  6. Bake
    Bake uncovered for 45 minutes.
    Remove from oven, brush with the remaining glaze, and sprinkle the top with cheese.
    Return to the oven for another 15 minutes, or until internal temperature reaches 160°F (71°C).
  7. Rest & Serve
    Let the meatloaf rest for 10 minutes before slicing.
    Serve with mashed potatoes or roasted veggies for the ultimate comfort meal.
