Soft & Gooey Homemade Cinnamon Rolls with Creamy Vanilla Frosting

There are some recipes that feel like home from the very first bite. These cinnamon rolls are one of them.

My mom showed me how to make cinnamon rolls like this when I was younger, and I still remember how the kitchen smelled while they were baking. Warm cinnamon, buttery dough, and that sweet vanilla aroma filling the whole house. They were always the kind of treat that made everyone suddenly appear in the kitchen asking, “Are they ready yet?”

These homemade cinnamon rolls are soft, fluffy, buttery, and filled with a generous layer of cinnamon sugar. They are finished with a smooth, creamy frosting that melts beautifully over the warm rolls.

They may look impressive, but they are actually simple to make at home. The secret is giving the dough enough time to rise and not overbaking the rolls.

Soft Homemade Cinnamon Rolls

Ingredients

For the dough

  • 3 1/2 cups all-purpose flour
  • 1 cup warm milk
  • 2 1/4 teaspoons active dry yeast
  • 1/4 cup granulated sugar
  • 1/3 cup melted butter
  • 1 large egg
  • 1/2 teaspoon salt

For the cinnamon filling

  • 1/2 cup softened butter
  • 3/4 cup brown sugar
  • 2 tablespoons ground cinnamon
  • 1 teaspoon vanilla extract

For the creamy frosting

  • 4 ounces cream cheese, softened
  • 2 tablespoons softened butter
  • 1 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 2 to 3 tablespoons milk, as needed

How to Make Them

1. Prepare the dough

Pour the warm milk into a large bowl. It should feel warm but not hot. Stir in the yeast and a little of the sugar, then let it sit for about 5 to 10 minutes.

The mixture should become slightly foamy, which means the yeast is active.

Add the remaining sugar, melted butter, egg, and salt. Mix well.

Gradually add the flour, stirring until a soft dough forms.

Transfer the dough to a lightly floured surface and knead for about 6 to 8 minutes, until it becomes smooth and elastic.

Place the dough in a lightly greased bowl, cover it, and let it rise in a warm place for about 1 hour, or until doubled in size.

2. Make the cinnamon filling

While the dough rises, combine the brown sugar and cinnamon in a small bowl.

Keep the butter softened so it spreads easily over the dough.

3. Roll out the dough

Once the dough has doubled in size, gently punch it down and transfer it to a lightly floured surface.

Roll it into a large rectangle, approximately 1/4 inch thick.

Spread the softened butter evenly over the entire surface, leaving a small border around the edges.

Sprinkle the cinnamon and brown sugar mixture generously over the butter.

For an extra fragrant filling, add a little vanilla extract to the butter before spreading it.

4. Roll and cut

Starting from one of the long sides, carefully roll the dough into a tight log.

Cover and let them rise again for about 30 to 45 minutes.

5. Bake

Preheat your oven to 350°F (175°C).

Bake the cinnamon rolls for approximately 20 to 25 minutes, or until the tops are lightly golden and the centers are cooked through.

Be careful not to overbake them. You want the centers to remain soft and tender.

6. Make the frosting

While the rolls are baking, beat the softened cream cheese and butter until smooth.

Add the powdered sugar and vanilla extract and mix until creamy.

Add the milk, one tablespoon at a time, until you reach your preferred consistency.

7. Frost the cinnamon rolls

Let the cinnamon rolls cool for just a few minutes after removing them from the oven.

Spread the frosting generously over the warm rolls and let it melt into all those beautiful cinnamon layers.

Serve warm.

Tips for Perfect Cinnamon Rolls

Use warm milk, not hot milk. Very hot liquid can damage the yeast and prevent the dough from rising properly.

Don’t rush the rising time. The dough needs to become noticeably larger and airy before moving to the next step.

Roll the dough evenly. This helps ensure that every cinnamon roll has a similar amount of filling.

Don’t overbake. Cinnamon rolls should be soft and fluffy in the center, not dry.

Frost while warm. Adding the frosting while the rolls are still slightly warm gives you that irresistible creamy layer that melts over the top.

Make-Ahead Option

You can prepare the rolls the night before.

Arrange the cut rolls in the baking dish, cover them tightly, and refrigerate overnight. The next morning, let them sit at room temperature for about 30 to 45 minutes before baking.

Then bake as directed and frost them while warm.

How to Store Them

Store leftover cinnamon rolls in an airtight container at room temperature for up to 2 days, or refrigerate them for up to 4 days.

Warm individual rolls in the microwave for a few seconds before serving to bring back their soft texture.

These cinnamon rolls are especially good with a cup of coffee in the morning, but honestly, they are hard to resist at any time of day.
