INGREDIENTS
For the Crust
• 2 cups graham cracker crumbs
• 0.5 cup unsalted butter, melted
• 2 tablespoons brown sugar
For the Butter Pecan Filling
• 8 ounces cream cheese, softened
• 0.75 cup packed brown sugar
• 1 teaspoon vanilla extract
• 1.5 cups whipped topping, thawed
• 1 cup pecans, toasted and chopped
• 0.25 teaspoon salt
For the Topping
• 1 cup whipped topping, thawed
• 0.25 cup toasted pecans, chopped
• 1 tablespoon caramel sauce (optional)
STEPS
- Prepare the crust: In a medium bowl combine the graham cracker crumbs, melted butter, and brown sugar. Stir until the mixture resembles wet sand and holds together when pressed.
- Form the crust: Firmly press the crumb mixture into the bottom of an 8×8-inch baking dish. Use the bottom of a measuring cup to create a smooth, compact layer.
- Chill the crust: Refrigerate the crust for 20–30 minutes while preparing the filling. This helps it firm up and hold together when sliced.
- Beat the cream cheese: In a large mixing bowl beat the softened cream cheese until completely smooth and fluffy with no lumps remaining.
- Make the filling: Add the brown sugar, vanilla extract, and salt. Beat until creamy and fully incorporated. Fold in the whipped topping and 1 cup of toasted pecans until evenly distributed.
- Assemble the bars: Spread the butter pecan filling evenly over the chilled crust, smoothing the top with a spatula.
- Add the topping: Spread the remaining whipped topping over the filling. Sprinkle with the remaining toasted pecans and drizzle lightly with caramel sauce if desired.
- Chill and serve: Refrigerate for at least 4 hours or overnight until fully set. Slice into bars and serve chilled.
NOTES
Tips: Toasting the pecans before adding them to the filling dramatically enhances their flavor and brings out their natural buttery sweetness. Full-fat cream cheese provides the richest texture and helps the bars hold their shape after chilling. Be sure the cream cheese is fully softened before mixing to ensure a silky smooth filling. For even deeper flavor, use dark brown sugar instead of light brown sugar. These bars are ideal for making ahead since the texture improves after several hours in the refrigerator. For clean slices, chill overnight and wipe the knife clean between cuts. Store tightly covered in the refrigerator for up to 5 days. The bars can also be frozen for up to 2 months and thawed overnight in the refrigerator before serving. Their creamy texture, toasted pecans, and rich butter pecan flavor make them a timeless dessert that feels straight from an Amish farmhouse kitchen.
