Cheesy Scalloped Potatoes

Ingredients

  • 4–5 medium potatoes (thinly sliced)
  • 2 tablespoons butter
  • 2 tablespoons all-purpose flour
  • 2 cups milk
  • 1 1/2 cups shredded cheddar cheese
  • 1/2 cup grated Parmesan cheese
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon paprika (optional)

Instructions

Preheat your oven to 180°C (350°F) and grease a baking dish.

Peel and thinly slice the potatoes (about 1/8 inch thick) to ensure even cooking.

In a saucepan over medium heat, melt the butter. Add the flour and whisk continuously for about 1–2 minutes to form a smooth roux.

Gradually pour in the milk while whisking constantly to prevent lumps. Continue cooking until the sauce thickens and becomes smooth.

Add the cheddar cheese and Parmesan cheese, stirring until fully melted and creamy.

Season the sauce with salt, black pepper, garlic powder, and paprika if using. Mix well.

Layer half of the sliced potatoes in the baking dish, slightly overlapping them.

Pour half of the cheese sauce over the potatoes, spreading it evenly.

Add the remaining potatoes on top, then pour the rest of the sauce over everything.

Cover the dish with foil and bake for 40 minutes.

Remove the foil and bake for an additional 20–25 minutes, or until the top is golden and the potatoes are tender when pierced with a fork.

Let the dish rest for 5–10 minutes before serving to allow the sauce to set.
