Vanilla Wafer Cake is a classic Southern-style dessert that transforms simple vanilla wafers into a rich, tender cake with layers of sweet vanilla flavor. It’s easy, comforting, and perfect for potlucks, holidays, or anytime you’re craving a slice of something nostalgic.
Ingredients
2 cups crushed vanilla wafer cookies
1 cup all-purpose flour
1 teaspoon baking powder
¼ teaspoon salt
½ cup unsalted butter, softened
1 cup granulated sugar
3 large eggs, room temperature
1 cup milk
1 teaspoon vanilla extract

Instructions
Preheat the oven to 350°F (175°C). Lightly grease a bundt pan or 9×13-inch baking dish to prevent sticking.
Place the vanilla wafers in a zip-top bag and crush them into fine crumbs using a rolling pin. Measure out 2 cups and set aside.
In a bowl, whisk together the flour, baking powder, and salt until evenly combined. Stir in the crushed vanilla wafer crumbs and mix well.
In a separate large bowl, cream the softened butter and granulated sugar together until light and fluffy, about 2–3 minutes. Add the eggs one at a time, mixing well after each addition.
Slowly add the dry ingredients to the butter mixture, alternating with the milk. Begin and end with the dry ingredients, mixing just until combined. Stir in the vanilla extract.
Pour the batter into the prepared pan and spread evenly. Tap the pan gently on the counter to release any air bubbles.
Bake for 35–40 minutes, or until a toothpick inserted into the center comes out clean and the top is lightly golden.
Remove from the oven and allow the cake to cool in the pan for 10–15 minutes before turning out onto a wire rack to cool completely.
Dust with powdered sugar or top with whipped topping before serving, if desired.
Tips
Finely crushed wafers give the smoothest texture.
Do not overmix to keep the cake tender.
This cake stays moist for several days when covered.
