Grandma’s Homestyle Sausage Potato Soup is the kind of meal that warms you from the inside out. Made with tender potatoes, savory sausage, and a creamy broth, this soup is simple, filling, and perfect for chilly evenings or anytime you need a bowl of pure comfort.
Ingredients
1 pound smoked sausage or breakfast sausage, sliced or crumbled
4 cups potatoes, peeled and diced
1 small onion, finely chopped
2 cloves garlic, minced
3 cups chicken broth
1 cup whole milk
½ cup heavy cream
2 tablespoons butter
2 tablespoons all-purpose flour
½ teaspoon salt
½ teaspoon black pepper
¼ teaspoon paprika
Optional: chopped parsley or green onions for garnish
Instructions
Begin by cooking the sausage. Place a large pot over medium heat and add the sausage. Cook for 6–8 minutes, stirring often, until browned and cooked through. Transfer the sausage to a plate and set aside, leaving the flavorful drippings in the pot.
Add the butter to the pot along with the chopped onion. Cook for 3–4 minutes, stirring occasionally, until the onion is soft and translucent. Add the minced garlic and cook for 30 seconds, just until fragrant.
Sprinkle the flour over the onions and stir constantly for 1 minute to form a light roux. Slowly pour in the chicken broth while stirring to prevent lumps. Add the diced potatoes, salt, black pepper, and paprika.
Bring the soup to a gentle boil, then reduce the heat to low. Cover and simmer for 15–18 minutes, or until the potatoes are fork-tender.
Stir in the cooked sausage, milk, and heavy cream. Simmer uncovered for another 5–7 minutes, stirring occasionally, until the soup thickens and is heated through.
Taste and adjust seasoning if needed. Remove from heat and let the soup rest for a few minutes before serving.
Ladle into bowls and garnish with parsley or green onions if desired. Serve hot with crusty bread or biscuits.
