Garlic Parmesan Chicken Skewers

These Garlic Parmesan Chicken Skewers are the kind of recipe that disappears fast. Tender chunks of chicken are coated in a rich garlic butter mixture, grilled or baked until juicy, then finished with a generous shower of Parmesan. They’re perfect for weeknight dinners, parties, or anytime you want big flavor with simple ingredients.

Ingredients

2 pounds boneless, skinless chicken breasts or thighs, cut into 1½-inch pieces
3 tablespoons olive oil or melted butter
4 cloves garlic, finely minced
1 teaspoon Italian seasoning
½ teaspoon paprika
½ teaspoon salt
½ teaspoon black pepper
¾ cup freshly grated Parmesan cheese
2 tablespoons chopped fresh parsley

Instructions

If using wooden skewers, soak them in water for at least 20 minutes to prevent burning.

Place the chicken pieces in a large bowl. Add olive oil or melted butter, minced garlic, Italian seasoning, paprika, salt, and black pepper. Toss thoroughly until every piece of chicken is evenly coated. Let the chicken rest for 10–15 minutes to absorb the flavors.

Thread the seasoned chicken onto skewers, leaving a small space between pieces so they cook evenly.

For oven baking, preheat the oven to 400°F (205°C). Line a baking sheet with foil and lightly grease it. Arrange the skewers in a single layer. Bake for 18–22 minutes, turning once halfway through, until the chicken is fully cooked and lightly golden.

For grilling, preheat the grill to medium-high heat. Lightly oil the grates. Grill the skewers for 10–12 minutes total, turning every few minutes, until the chicken is nicely charred and cooked through.

Once the chicken is cooked, immediately sprinkle the hot skewers generously with grated Parmesan cheese. The heat will melt the cheese slightly and help it cling to the chicken. Return to the oven or grill for 1–2 minutes if needed to soften the cheese.

Remove from heat and finish with chopped parsley. Let rest for a couple of minutes before serving to keep the chicken juicy.

Tips

Chicken thighs stay extra juicy if grilling.
Use freshly grated Parmesan for the best flavor and melt.
