Herb & Cheese Quick Bread is the kind of simple, homemade bake that fills your kitchen with comfort. No yeast, no kneading—just mix, bake, and enjoy. Loaded with cheese and fragrant herbs, this bread is perfect alongside soups, salads, or served warm with butter straight from the oven.

Ingredients

2 cups all-purpose flour
1 tablespoon baking powder
½ teaspoon salt
½ teaspoon black pepper
1 teaspoon dried Italian herbs (or a mix of rosemary, thyme, and oregano)
1 cup shredded cheddar cheese (or cheese of choice)
1 cup milk
¼ cup vegetable oil or melted butter
1 large egg

Instructions

Preheat your oven to 375°F (190°C). Grease a standard loaf pan or line it with parchment paper.

In a large bowl, whisk together the flour, baking powder, salt, black pepper, and dried herbs until evenly combined. Stir in the shredded cheese, coating it lightly with the flour mixture to help prevent sinking.

In a separate bowl, whisk together the milk, oil or melted butter, and egg until smooth.

Pour the wet ingredients into the dry ingredients and gently stir just until combined. Do not overmix—the batter should be thick and slightly lumpy for a tender loaf.

Transfer the batter into the prepared loaf pan and smooth the top. If desired, sprinkle a little extra cheese or herbs over the surface.

Bake for 40–45 minutes, or until the bread is golden on top and a toothpick inserted into the center comes out clean.

Remove from the oven and let the bread cool in the pan for 10 minutes, then transfer to a wire rack to cool slightly before slicing. Serve warm or at room temperature.

Avoid overmixing to keep the bread soft and fluffy.

This bread stores well wrapped at room temperature for up to 2 days.
