Slow Cooker Snowballs

Ingredients

2 cups granulated sugar
½ cup unsalted butter
½ cup milk
1 tsp vanilla extract
3 cups shredded coconut (sweetened or unsweetened)
2 cups crushed vanilla wafers or graham crackers
Powdered sugar, for rolling

Instructions

Prepare the slow cooker
Lightly grease the inside of your slow cooker with butter or nonstick spray. Set it to LOW heat.

Make the base mixture
Add the sugar, butter, and milk to the slow cooker. Cover and cook for 45–60 minutes, stirring occasionally, until the butter is fully melted and the mixture is smooth and slightly thickened.

Add flavor and texture
Stir in the vanilla extract, shredded coconut, and crushed cookies. Mix thoroughly until a thick, moldable dough forms. Cover and cook for another 20–30 minutes, stirring once or twice to prevent sticking.

Form the snowballs
Turn off the slow cooker and let the mixture cool just enough to handle. Scoop small portions and roll into bite-sized balls using your hands.

Coat and set
Roll each ball generously in powdered sugar to create a “snowball” look. Place on a parchment-lined tray and allow them to cool completely until set.
