Grandma’s Cozy Chicken Salad Croissant Minis

These Grandma’s Cozy Chicken Salad Croissant Minis are soft, creamy, and perfectly bite-sized—just like the ones served at family luncheons and holiday gatherings. Tender chicken mixed with a lightly sweet, savory dressing is tucked into buttery mini croissants for an irresistible, comforting treat.

Ingredients

  • 3 cups cooked chicken, finely chopped or shredded
  • ½ cup mayonnaise
  • 1 tbsp Dijon or yellow mustard
  • 1 tbsp lemon juice or apple cider vinegar
  • 1 tbsp honey or sugar
  • ½ tsp salt
  • ½ tsp black pepper
  • ½ cup celery, finely diced
  • ¼ cup grapes, finely chopped (optional)
  • 2 tbsp finely chopped onion or green onion
  • 12 mini croissants
  • Lettuce leaves (optional)

Instructions

  1. Prepare the chicken salad
In a large bowl, combine the chicken, mayonnaise, mustard, lemon juice, honey, salt, and black pepper. Stir until creamy and well blended.
  2. Add crunch and sweetness
Fold in the diced celery, grapes (if using), and onion. Mix gently to keep the texture light.
  3. Chill for best flavor
Cover and refrigerate for 30–60 minutes to allow the flavors to meld.
  4. Assemble the minis
Slice the mini croissants in half horizontally. Add a small lettuce leaf if desired, then spoon the chicken salad onto the bottom half.
  5. Serve
Place the croissant tops on, arrange on a platter, and serve chilled or slightly cool.

Tip: These can be made a few hours ahead—just assemble right before serving to keep the croissants fresh and flaky.
